Description
When you are introduced to Peranakan (Nyonya) cuisine, you will likely get Ayam Pongteh (Braised Chicken Stew) or the traditional Babi Pongteh (Pork) on the table. This is a traditional Melaka Peranakan dish of braised chicken or pork in fermented bean paste with bold, sweet and salty flavor accompanied with dried shitake mushrooms and potatoes. In a typical Peranakan household, this dish would be eaten with sambal belacan (chili and shrimp paste). Spicy Heat Level is for Sambal Belacan. Fermented shrimp paste is used in this chili paste. You have an option to omit this.
